A charcoal grill, a fryer, and a very long lunch rush
Falafel Flare came out of a simple frustration: it was too hard to find halal Mediterranean food in the East Bay that was genuinely fresh, generous and quick. So we built the place we wanted to eat at.
We started with recipes from home and one rule: cook it the way you'd cook it for your own family.
The falafel mix is chickpeas soaked overnight, ground with parsley, cilantro, garlic and cumin — never a powder, never a pre-made frozen puck. It goes into the fryer when your ticket prints, which is why it arrives crisp on the outside and still bright green in the middle.
The kebabs are marinated for a full day and cooked over live charcoal. Gas is faster and cleaner and every kebab house that switches to it loses the thing that made the kebab worth eating. We kept the coals.
Around that we built a menu wide enough for a whole table to agree on — wraps and platters for the purists, burgers and pizza for the kids and the friend who “doesn't do Mediterranean,” and a full vegan section that isn't an afterthought.
Today most of our volume comes through pickup and delivery orders from people who found us once and never went back to searching. That's the whole business plan.
Four things we won't compromise on
Halal, all the way through
Not a halal option — a halal kitchen. Every protein we buy is certified, and there is no non-halal meat in the building to cross paths with it.
Cooked when you order it
Falafel is dropped fresh, kebabs go on the coals, burgers hit the flat-top. Nothing sits in a warmer waiting for someone to want it.
Portions people talk about
Our platters are the reason half our regulars found us. You should leave full, and you should have lunch tomorrow.
Built for a busy street
